Kid Friendly Recipe For Zucchini – Curried Zucchini Soup

Friends introduced me to this yummy, easy to make homemade soup…

Ingredients
   1 teaspoon of butter
   1 Spanish onion
   4 zucchini
   1 teaspoon curry powder
   2 cups chicken stock

Method:
   1) Melt butter in frying pan
   2) Chop onion up into small pieces and then sauté in frying pan for about 5 minutes
   3) After washing, remove both ends of all four zucchini, then slice them
   4) Add the chicken stock and the curry powder to the frying pan… and then the sliced zucchini
   5) Bring the contents of the frying pan up to a boil, then simmer for about 30 minutes
   6) Once zucchini is cooked, using a hand blender, purée the contents of the frying pan… then serve

Optional ingredients: Add a little milk or sour cream

I did NOT use the optional ingredients, and I enjoyed this recipe. Having been so impressed by the ease of making, the presentation (looks of the soup) of, and the great taste this soup offered me, I just had to share this recipe with you. Let me know if you like this recipe or not, won’t you?

  1. Good afternoon Trish,

    This year we are blessed with monster Zucchini in the vegetable garden. When I have guests in the summer and we sit outside in the pergola I often give them my cold Zucchini soup. My recipe is very similar to yours.

    I use olive oil and add some garlic, as I live in the south of Spain that is a must. I add some potato and when ready I let it cool to then put in the fridge overnight. Before serving a little cream gives it the last touch.

    As the harvest is far over normal proportions we will have this soup often.

    • Oh wow Taetske, I love the idea of adding potato to this soup (must be the Irish influence in me 🙂 ) As far as I am aware, our zucchini are not known to grow very large… about the size of a cucumber… though I’m sure there has been someone who grew monsters 😀

      Also like making noodles of my zucchini so that I can REALLY pig out on spaghetti and meat sauce. I’ve found that I can easily freeze extra noodles for future use.   2. I may not be a “kid” but I love soup and this seems like a very easy recipe to make. Being an absolute fan of curry, for its taste and medicinal qualities, I personally would use 2 teaspoons of curry powder. That’s how I would roll. Thanks for this post Trish!

    • LOL, I hear ya’ Rob, and the couple who told me about this recipe probably suggested I lower the curry powder used until I get used to it. Personally, I love this soup just the way it is, ’cause at heart, I’m still a kid 😉
